Recipe Name : Sourdough Starter
About my Recipe: Cook Book
Ingredients:1 envelope active dry yeast
2 cups warm water
2 cups all-purpose flour
1 small potato, halved
Method::1. Combine all ingredients in a 1-1/2 quart glass or earthenware bowl.

2. Cover with cheesecloth. Leave in warm room 48 hours. Stir 2 to 3 times. Mixture will ferment, bubble and acquire a slightly sour smell.

3. To use, stir and remove desired amount. To remaining starter, add equal parts flour and water, (e.g. 2 cups water and 2 cups flour). Stir and allow to stand a few hours at room temperature until mixture bubbles. Cover and refrigerate.

By replenishing starter, it will last indefinitely. Never add anything except flour and water to starter.

This came from Necessities and Temptations, from the Junior League of Austin. As soon as I try out a sourdough bread recipe, I'll post it (that is, if it's any good!).

What I do with mango's
I buy about 6 good size mango's. Peel off skins. Cut the fruit from the big seed inside. Put the chunks of mango into a blender and blend until smooth then measure till I have 2 cups. There really isn't a specific time to buy mango's because they usually are expensive year round, but bread is worth making, it is delisious. I got recipe from a friend while stationed in the Philippines.

Pour boiling water over dry ingredients, add oil and cool to luke warm
dissolve yeast in warm water
when dough is cooled, add to dough (DO NOT add yeast while dough is hot or you will kill your yeast)
stir in enough flour to make a stiff dough
turn onto floured surface and kneed 5-10 minutes or until smooth (you know like a baby's behind)
place in greased bowl, cover with plastic wrap (spray the wrap also)
let rise until doubled in size
punch down and let rise again
grease pans
