| Ingredients: | ½ c butter
1 c white sugar 2 eggs 1 c mashed bananas (about 3) 1 tsp vanilla 1 tsp soda 4 tbsp sour milk (you can sour milk by adding a bit of vinegar to it) 1 ¾ c flour 2 tsp baking powder ¼ tsp salt |
| Method: | Cream butter, add sugar and beaten eggs. Add bananas and vanilla. Beat well. Dissolve soda in milk. Mix together flour, baking powder and salt. Add alternately to banana mixture. Bake in loaf pan 350 for approx 50 minutes |

| Method: | Mix all ingredients together right in 8X8 pan you’re going to bake cake in.
Make 3 wells (holes) In one put 1 tsp vanilla In next put 1 tbsp vinegar In next put 5 tbsp melted butter Then pour a cup of hot water over all. Mix well. Bake at 350 30 min. Ice or sprinkle icing sugar over top as desired. |

1 c finely crushed vanilla wafers (30-36) 1 c confectioners sugar 1 c chopped pecans 2 tbsp cocoa 2 tbsp corn syrup ¼ c rum, bourbon or brandy granulated sugar, additional finely chopped pecans, cocoa to roll them in |
| Method: | Stir together crumbs, sugar, pecans and cocoa. Add corn syrup and rum. Mix well, then shape into 1” balls. Roll in the sugar/pecan/cocoa mixture. Store in an air tight container. Best if made well ahead of time. (makes 36) |

| Ingredients: | Bottom Layer
½ c butter ¼ c sugar 5 tbsp cocoa 1 egg, beaten 1 ¾ c graham wafer crumbs 1 c. fine coconut ½ c finely chopped walnuts Melt first 3 ingredients in top of double boiler or heavy saucepan. Add egg and stir to cook and thicken. Remove from heat. Stir in rem ingredients. Press firmly into ungreased 9X12 pan. |

½ c butter 3 tbsp milk 2 tbsp vanilla custard powder 2 c icing sugar Cream together well. Beat till light. Spread over bottom layer. Top Layer 2/3 cup semi sweet chocolate chips or 4 (1 oz) squares chocolate 2 tbsp butter Melt together over low heat. Cool. When cool but still runny, spread over middle layer. Chill in refrigerator. Use a sharp knife to cut. |

1 c graham cracker crumbs 1 c flaked coconut 6 oz pkg butterscotch chips 1 c chopped walnuts 6 oz pkg semi sweet chocolate chips 1 15 ounce can sweetened condensed milk |
| Method: | Melt butter in 13X9 pan over low heat. Sprinkle ingredients in layers in order, ending with condensed milk. Bake for 30 minutes at 350. Cool, cut into bars. |

| Ingredients: | 4 cups apples (peeled and sliced)
Mix together – 1 c flour 1 c rolled oats 1 c brown sugar 1 tsp cinnamon |
| Method: | then cut in ½ cup butter.
Mix about ¼ of the crumb mixture with the apples. Spread in a buttered 9X12 pan. Cover with remaining crumb mixture and pat down slightly. Bake at 350 for 35-40 minutes or till apples are cooked and top browns. |

4 c rice krispies 4 c corn flakes Mix together. Crumple corn flakes. 1 c walnuts |

2 c. peanut butter 2 c corn syrup 2 c brown sugar Bring to a boil stirring constantly. Add to dry ingredients. Mix thoroughly. Roll into logs and place on wax paper. Let cool for a while. 2 boxes semi sweet chocolate ½ bar para wax Melt together Dip logs with tongs. Place on waxed paper. |

| Ingredients: | 1 Package of White Cake Mix
1 Can of Sweetened Condensed Milk 1 Can or Package of Cream of Coconut 1 Package of Flaked Coconut 1 Can of Whipped Cream 1 Straw |
| Method: | 1) Bake the white cake mix after mixing it. Use 13' by 9' pan, and follow directions on how to bake.
2) Let it cool completely 3) Poke many holes (up to 50) in the cake with the straw. 4) Mix together the condensed milk and cream of coconut(may be liquidy) 5) Pour the mixture onto the cake. If it is too liquidy, pour some of it back out, so it only remains on the cake and not on the corners. 6) Spray the whipped cream on top of cake 7) Sprinkle all of the flaked coconut. 8) Eat! |

100 g caster sugar(half cup) 1 large egg,beaten 200g self raising flour(one and three quarter cups) quarter teaspoon salt quarter teaspoon bicarb of soda 100 g seedless raisins(two thirds cup) 2 large ripe bananas,peeled and mashed 50g walnuts,chopped(optional) (half cup) |
| Method: | Grease a 450g loaf tin and line with greaseproof paper.
Put butter and sugar in a bowl,beat together until light and fluffy,then beat in egg a little at a time.Sift together flour,salt, and bicarb of soda and fold into the creamed mixture until evenly blended.Stir in the bananas,raisins, and walnuts(if using). Sppon mixture into prepared tin.Bake at 180c/gas mark 4 for 50-60 min or until a skewer inserted into the centre of the loaf comes out clean.Leave to cool in tin,then turn out and remove paper lining. To freeze: wrap in foil,then pack in a freezer bag. Seal,label,and freeze. To thaw: thaw in wrappings at room temperature for 3-4 hours. Serves 6 |

| Method: | pre-heat oven to 350 degrees
mix in large bowl pumpkin, milk, eggs, sugar, and spices pour into 13 X 9 greased and floured pan sprinkle dry cake mix on top of pumpkin mixture, spreading evenly and completely covering pumpkin sprinkle on nuts drizzle melted butter over cake leaving some of the cake mix dry bake at 350 for 50 minutes or until center set |
