Recipe Name : http://3 Ingredient Semisweet Chocolate Pudding
About Recipe : Adapted Recipe
Ingredients:1 bag chocolate chips
1 box SILKEN soft tofu (abt. 12 oz or so)
(DO NOT let the tofu scare you - this is *pure chocolate sin*, trust me)
3/4 cup milk (cow/soy/oat/rice/almond/etc., any flavor is fine)
Method:No, your pudding won't taste like tofu! Even if you're scared of tofu, try this recipe - for me!
Take your little box of soft silken tofu - kinda looks like a juicebox, eh? Set it on the counter. Let it sit out until it's room temperature. It won't go bad, don't worry - the little boxes are aseptic/sterile.Open your cute little box of tofu. Floop it out into your blender - you don't have to drain it or anything.
Add your milk of choice - I like to use chocolate soymilk. Cover the blender and turn it on high until the tofu is pretty much liquified - about 1 minute or so.
Take the bag of chocolate chips and rip it open, eating all the chips that spill out on the counter. Pour the rest of the chips in a bowl and put them in the microwave. Zap it on med. until the chips look kinda shiny and pretty. Take them out, stir them around, and let them sit for a minute. Stir them around again and if there are any lumps, zap again for just a few seconds. Keep stirring and zapping until the chocolate is completely melted.
Get a scraper or a spoon and tote the chocolate over to the blender. Turn the blender on high, remove the lid, and *carefully* scrape the chocolate in. Once all the chocolate is in, put the lid back on and blend for 2 minutes.
Once it's done, eat with a spoon, refigerate for a pie middle, or freeze for ICE CREAM!!

Recipe Name : http://Speedy_Mike's Ever So Slightly World Famous FRUITCAKE
About Recipe : Old Family Recipe
Ingredients:1/2 t salt 2 C chopped pecans
1 t soda 1 C raisins
1 t cinnamon 1 C chopped dates
1 t nutmeg 2 oz candied
1 t ground cloves pineapple
2-1/2 C flour 1/2 C almonds
2 oz lemon or orange peel 2 oz candied cherrys
(2/3 C)
1 t coca
__________________________Dry Items______________________
--------------------------Wet Items----------------------

1 C butter
1 C brown Sugar
3 eggs 1 pt. fig or pear preserves
1 C buttermilk brandy or bourbon
1/4 C grape juice

Method:This is NOT your standard 'door-stop' fruitcake.

Here goes: Sift into a LARGE bowl, all dry ingredients and mix well with flavored nuts and fruits. Cream butter, add sugar, buttermilk and the well beaten eggs. Combine with flour and fruits. Add preserves (syrup and all) and grape juice. Mix well. The mix is usually very thick and you may have to mix with hands. Add booze to thin a bit.

Prepare pan(s) with Pam or similar. I have used one tube pan for this or have used 2 regular loaf pans and a small loaf pan. Pour mix into pan(s)and bake in 250 degrees F with a pan of water placed in bottom of stove to keep the stuff moist. Cooking time is 2-1/2± hours. Determine done-ness by inserting a toothpick into the cake. When it comes out nearly clean the cake is done.

NOTES:
1)** Don't forget the water in the bottom of the stove to preserve moisture.
2) I've always used a pint of figs. I don't know how it would taste with pears but it would Have to be good.
3) I got this from my mother, nee, Mary Jean Mitchell, who got it from her sister-in-law Helen Mitchell, who got it from her mother-in-law (my grandmother) Burr Mitchell. Please give credit if you share this with anyone else.
4) Mom said that in the 1940's they would prepare this in coffee cans and send it to the soldiers overseas fighting in WW II. Neat trivia, huh!
