Ingredients:You need:
Olive Oil,
1 Salmon [about 1.8 - 2kg/ 4lb -4lb 8oz gutted, cleaned weight] washed and dried
1 large un-waxed lemon, sliced
Salt and freshly ground black pepper.

For the Water Cress Mayo

25g/1oz watercress
4 tablespoons mayonnaise
2 tablespoons of Fromage frais (Crème fraise)
1teaspoon horseradish sauce
Salt and freshly ground black pepper

Method:Dishwasher Salmon & Watercress Mayonaise

From the salmon farm to the dishwasher - what a life!

Taken from the Scottish Kitchen

Serves 6-8

Method:
Run the dishwasher to ensure that it's clean. Remember not to use any powder!
Lay out a large sheet of foil and place the salmon on it.
Stuff with slices of lemon, salt and pepper.
Wrap the fish in foil. It is vital to ensure that there are no holes. Wrap with two more layers. If you do make a tear patch well

Place a wire cake rack on the top of the dishwasher and place the fish on that. (That way it is not impaled on the spikes of the machine).
Place the fish on the top rack of the dishwasher.

Set the machine to its longest hottest cycle. It should last 80 - 90 mins.
When the cycle completes. Leave the door shut for 20 mins before carefully removing the fish and allowing it to cool in the foil.

1/2 cup sugar
1/2 cup cranberry juice

Bring to a boil over medium-high heat. Combine the cornstarch and cold water to make a paste; stir into gravy. Cook and stir until thickened. Season with salt. I made this with a Boston butt pork roast (about a third of the cost of a rolled pork loin roast) and it was great.

Recipe Name : Mexican Rice Casserole
About Recipe : Adapted Recipe
Ingredients:3 c. cooked white rice (still warm preferably)
1 lb. ground beef, browned and crumbled
1 14 oz can tomato sauce
1/2 jar salsa (mild, medium or hot to your taste)
1-2 c. mexican cheese blend shredded (or Cheddar/Jack)
Method:Mix the cooked white rice, ground beef, 1/2 jar salsa and almost all of the can of tomato sauce. Should be just slightly on the soupy side.

Cover with shredded cheese and place in oven or under broiler JUST UNTIL CHEESE MELTS.

Enjoy.

This is so easy and has always been a hit at potlucks as well as at home. You can omit the beef for a veggie type meal or omit the cheese if you are cutting down on the fat. (I'd sooner take my chances - I love melted cheese.)
