Ingredients:This salad has a very low glycemic index when prepared with stevia... probably does even when fixed with sugar.. considering the fiber and acid content. It is VERY good!

1/4 cup red wine vinegar
2 Tbsp olive oil
1 tsp lemon juice
1 clove garlic (minced)
scant 1/16 tsp white stevia extract OR 2 tsp sugar

1 can (15oz) black beans (rinsed and drained)
1 cup frozen corn (or drained canned corn)
1 cup chopped bell peppers (colorful)
1/4 cup chopped parsley (or 1 Tsp dried)

Method:

1) Whisk the vinegar, olive oil, lemon juice, garlic and stevia (or sugar) together.

2) Combine everything else and toss with the dressing.

Ingredients:

3/4 c tomato juice

1/4 c blasamic or red wine vinegar

1 packet Italian salad dressing mix

2 tsp. sugar

Method:

In jar with a tight lid, combine all ingredients & shake well. Store in refrigerator. Makes 1 cup of dressing.

Recipe Name : Tortellini Salad with Broccoli, Mushrooms and Tomatoes

Ingredients:4 cups fresh broccoli florets
1 (9 oz) pkg. refrigerated tortellini
8 tablespoons extra-virgin olive oil, divided
4 oz. small mushrooms, quartered
1 cup pitted ripe olives
1 cup cherry tomatoes
3 garlic gloves, minced (I used more, since I LOVE garlic)
3 tablespoons finely chopped fresh Italian parsley
2 tablesppons chopped fresh basil
1/2 tsp. salt
1/2 tsp black pepper
Method:1. Cook broccoli in large pot of boiling salted water 1 minute or until bright green. Remove from water; reserve water for cooking pasta. Rinse broccoli under cold water to cool. Place in large bowl.

2. In same large pot of biiling salted water, cook tortellini 3 to 4 minutes or until tender. Dreain; toss with 1 tblspn. on the oil. Cool.

3. Add cooled pasta, mushrooms, olives & tomatoes. In small bowl, whisk together remaining 7 tblspns oil, garlic, parsley, basil, salt & pepper. Pour over pasta mixture. Let stand, covered, at room temperature 2 hours before serving ( although this one looked to good for me to wait that long).

Salad can be made up to 1 day ahead. This is a great light, summertime lunch or dinner.

Method:This not only is our family's favorite...it's a "staple"!!!

Ingredients:
6 large ripe or 12 plum tomatoes
1 clove garlic minced
1 tsp dried or 1/8 cup fresh chopped parsley
1 tsp dried or 1/8 cup fresh chopped basil
1 tsp dried or 1/8 cup fresh chopped oregano
4-5 TBS good virgin olive oil
salt & pepper to taste
hard Italian bread

Cut tomatoes over a large bowl into medium chunks allowing juice to go into bowl
Add spices and oil
Mix well
let sit at room temperature for 1 hour
serve with hard Italian bread to dip in the juices
