Good enough selection of Sake and beers. Most of dishes were simple and good. Prices are not expense in this area. But always have problems from daily base.
Hopefully, more customers and success business. Keep try your best, customer will be happy your heart and efforts.

Comments:First, my best Holiday wishes to Matsuda Sensei and his family, SCI, and all former (and future!) students. Let's hope for more peace in 2006. Next, for those considering attending SCI, it is a demanding school and the best Japanese Culinary education in the US. Study and practice. Keep and rewrite all your notes. Make everything Sensei teaches a part of you and watch it grow. Learn to taste, see, smell, and blend all ingredients. The secrets are in the basics. Learn to replicate classic dishes flawlessly and use those elements and basics to grow the cuisine forward. I know it will take me a lifetime to learn! Last, for chefs, get all the experience you can. You are the future of the food. Don't cheat future generations out of what you love and appreciate today. A real Japanese Culinary education in America is rare...

Dear Mr. Matsuda,

The Keiro Nursing Home wishes to extend its sincere thanks and appreciation to your group from the Sushi Chef Institute. The residents at Keiro Nursing Home thoroughly enjoyed the sushi-making and fruit cutting demonstration your group had provided on April 9, 2004.

Many of our residents were capable of making and serving sushi on special occasions and holidays when they were homemakers. They were able to relate to your techniques and the assortment of sushi provided. The sushi and fruits were displayed so beautifully and looked so appetizing. Most of all, everyone had the privilege of sampling the delicate and mouth-watering types of sushi and fruits.

Again, our heartfelt thanks to you and your group for thinking of us. Your time, support, and generosity are appreciated by all of us. We hope to see many of you again in the near future.

Comments:Olvera Street is Mexican town in Downtown, Los Angeles. They had a big event, Cinco De Mayo festival on May 3rd, 4th and 5th. An organizer asked us to demonstrate Sushi in the festival, so we joined on Sunday, May 4th. It was the most beautiful weather, and we had the most people in 3 days. The event place was filled up with a lot of people.

Our booth was located in Children's Village, so a lot of families came to see us. We demonstrated Roll Sushi and art cutting of fruits, and gave an experience of Roll Sushi making. It was so prosperous that I couldn't take a rest during 6 hours' demonstration. Japanese culture is very different from Mexican, so I don't know how children understand Sushi. But I hope it will be in their memories as Japanese ART.

Comments:I found a unusual seasonal sea food in fish market this morning. It call Namako ( Sea cucumber ) It is a one of my favor sea food. But it is no popular in US. However this sea cucumber was came from Japan. Red or green color looks very wild sea food. No one want to eat at 1000 years ago. But I was in child all my family were eat. And it was very popular item in Japan. I wash by salt and then pickle by sweet vinegar. It call Namako-su. If you are serving, cut small slice and daikon-oroshi and chili pepper.
If you have a chance to visit Japanese restaurant please try seasonal items. Namako-su has a vinegary favor with special flavor. Please you can challenge a new sea food. Namako has 90% water and a lot of minerals. It is a good for you.
