Comments:I love this page, the dying art of making cultured butter is one I so enjoy! Thank you for all the good info I have a 2 quart batch fermenting as I write you. I am interested in making the mascarpone cheese, I have made greek style yogurt by straining plain yogurt over a bowl in the fridge, I use that whey that comes out to make a great garlic rosemary bread. Would I do it in much the same way? and does it have to age after being strained? If you have the time I would love to hear tips on making that cheese. Have a happy holiday season...Rob

I hope more small dairies come into being again all over the US! I have become very disillusioned with large providers after doing lots of reading. Our adult son is mildly autistic (PDD/NOS to be specific) and he loved his time growing up on the dairy farms we worked at. He really liked the dairy goats we had when he was growing up. You are so that right that nowadays opportunities are much more limited for those with differences. We are hoping that this farm position comes thru in big part for our son's benefit as this is where his heart lies. Bravo and if we move to that area we will look you up for sure!

Comments:When I was a child back in the day.... at our elementary school we had a pair of sisters that taught first and second grade. They lived on a dairy farm with their father and every year if you were in their class you got to go on a field trip to their farm. There you would get the tour of the farm and at the end of the tour we made fresh churned butter and had it on crackers. Luckily for me I had the pleasure of being in both of their classrooms. I am now 51 years of age and that memory is fresh in my mind as it was just yesterday. I think children should experience fresh food without all the processes they are put through and all the chemicals added to them so they do not even taste like the fresh food that they are meant to be.
Thank You for creating fresh goodness for all to enjoy! Someday I hope to visit your farm.

Its been about 25 years since I've been to the Vernon area and its just as beautiful as I remember it.
So anyway , forget about the nice ride and beautiful surroundings....this place is all about the cheese and bread !!!! I was given a taste of all the wonderful cheeses and the medieval rye. They were all so good I bought some of each and some of the rye. Upon arriving home I got to eat a good amount of each cheese and about half the bread I bought.
THEY WERE ALL MUCH BETTR THAAN I COULD HAVE HOPED FOR !!!!
How did I not know about this place sooner?? Its definitely one of the best kept secrets in NJ.
I just want to say thanks to the White family and all the dairy employees for all their hard work in this noble (and delicious) endeavor.

I am making my first batch of cultured butter right now (we did one batch, uncultured, a few months ago and were disappointed with how unremarkable it was). This is very exciting!
